Who is the Pico Princess?

Hola Peeps!!

My name is Veronica Joy Didelot, better known as the Pico Princess, and I make the most authentic Tex-Mex Pico, Guac, and Seasoned Pintos Beans in all of Jacksonville, FL.  

A teacher by trade, with an M.S.Ed in curriculum, instruction, and assessment, it was my plan to open a school, but God obviously had a different plan…and it’s all about feedin’ y’all the Goods.  

This all started because, I don’t know how to make a little bit of Pico!! So, when we moved here in 2018, I started sharing it with everyone, and one day this woman at the gym told me “Veronica, I absolutely cannot take this free from you every week anymore” and shoved some money in my hand.  That day I went home and told my husband “Michael Honey, maybe I can make money making Pico!!

The name Pico Princess came from the the first professional food industry person that tried my Pico, who said “You ARE the Pico Princess.” To which I replied, I’m soooo gonna use that!!  That was Sep 2020, but it took 3 more years before I sold my 1st Pico on March 12, 2023. And, ever since that time at Atlantic Beach Farmers market, every single chance I get to sling the Goods and get to hear all the accolades y’all share, I’m humbled beyond words and laugh a joyous laugh shaking my head with so much gratitude in my heart by all that we have been blessed with. There is no doubt in my mind this is God’s plan, we are building a legacy for generations to come.

I’m a wife, mother, daughter, sister, friend, and volunteer at our local American Legion Post 316, where I make lunch once a week…follow me at Instagram, Facebook, and TikTok to get the low down on the weekly menu - which includes my authentic handmade fresh Tex-Mex favorites I grew up helping my mom make and have been enjoying passing down to my own family.

Born and raised in San Antonio, TX, I now call Mayport/Atlantic Beach, FL my home, and this is where we run our locally owned and family operated food manufacturing company…the Pico Princess.
